I love Mexican food. It is delicious, it is usually fairly easy to put together, and it freezes well which means I can make extra and freeze it for later. Fall is always a fast-paced season for us. With two parents that work in Education and two kids in full-time school, extracurricular activities, and parents that coach said activities we spend a lot of time in the car or running around. We do not always have time to get dinner ready. Since we have food allergies it means we cannot just jump in the car and hit up the drive-thru. So instead we try to have meals planned ahead of time.
