On-the-Go Snacks: Peanut Butter and Jelly Trail Mix

We run from school to practice and lessons 4 out of 5 days a week. Our only break between school and activities some days is the drive in the car. This can make it difficult to make sure the kids can do their homework and get their snacks in before an activity. This has made me the queen of on-the-go snacking recently. I try to make sure that I find recipes that pack a lot of protein and are easily eaten without a huge risk of choking, making a mess, or needing utensils.

One of our favorite on-the-go snacks is trail mix because the kids can eat it while we travel, it isn't too messy (depending on the kid) and it can be customized to each kid's likes with very little effort. Store-bought mixes tend to be on the sugary side and do not always contain the best protein options. We like to make our own because it allows us to make them a little bit healthier and we can add our favorites to them.

This mix from The Recipe Revival is a great start. This recipe calls for a specific cereal. I like to add some almonds, and cashews, and cut the cereal portion in half. That way they get the nutrition they need to go off and play and still get a little sweetness to their snack. I usually do 1 1/2 cups nuts (half almonds and half cashews) then 1 1/2 cups cereal. The recipe is so easy you can add or subtract according to your wishes.
